Oyster Mushroom Tacos

Ingredients

  • 2 cups homegrown Back to the Roots Oyster Mushrooms
  • 2 cloves garlic
  • 1/2 white onion
  • 1 bunch green onion
  • 1 bunch cilantro
  • 1 jalapeno pepper
  • 1 red bell pepper
  • 6 - 8 corn tortillas
  • 2 Tbsp olive oil
  • Salt and pepper to taste

Directions

  1. Finely chop the oyster mushrooms, vegetables and herbs.
  2. In a large pan, heat olive oil over medium high heat for 1 minute. Add  garlic, bell pepper and onions. Saute until soft.
  3. Add mushrooms and jalapeno. Cook over medium heat for about 5 minutes.
  4. Reduce heat to low and add cilantro, salt and pepper. Stir for about 1 minute.
  5. Scoop mushroom filling into warm tortillas. Serve hot and enjoy!
