We love trying the products and brands they choose and Bela Seafood, included in Brad Leone’s crate, might just be our new fav. It’s o.k., I know what you’re thinking.... canned fish is not cool. Stay with me. It is cost effective, nutrient dense, convenient and if you purchase the right brand, delicious.

It is sustainably wild caught off the alluring coast of the Algarve region of Portugal, and is hand packed within 8 hours to insure the freshest catch. The Algarve region is part of the non-industrial European coast on the southern border of Portugal and stretches up to the Spanish border. Seafood is abundant in the Algarve!

Mackerel is a low calorie food, contains no carbs and is rich in omega-3s along with calcium, vitamin D and B12. Mediterranean Roasted Mackerel

Ingredients

  • 2 Tbsp organic extra virgin olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced 
  • 1 24 oz can organic crushed tomatoes
  • 1/2 cup olives, sliced
  • 1/4 cup capers
  • 1 Tbsp paprika
  • 1 tsp red pepper flakes
  • 2 cans Bela Portuguese mackerel
  • 2 Tbsp lemon juice
  • Fresh chopped parsley for garnish 
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350 F. In a large skillet over medium-high heat, sauté the onions in olive oil until soft, about 3 minutes. Add the garlic and cook until aromatic, about 1 minute. Add the crushed tomatoes, olives, capers, paprika, and season with salt and pepper to taste. Stir to combine and cook until heated through, about 2 minutes.
  2. Meanwhile, in one large baking dish or 4 small personal dishes arrange the mackerel filets. Divide the tomato sauce mixture evenly over the fish.
  3. Roast for 8-10 minutes until the fish is cooked through. Remove from the oven and leave to rest.
  4. Squeeze fresh lemon juice over the roasted fish and garnish with parsley. Serve and enjoy!
