My husband is a traveler. Not by choice, but necessity. His job takes him all over the country weekly and overseas a couple of times a year. So, even though going out for dinner on Valentine’s Day is always nice, a home cooked meal is the best way for me to say I love you to my weary road warrior.
For Valentine’s Day dessert this year, I’m making a recipe from BraveTart by our February CrateChef, Stella Parks. Make Ahead Whipped Cream (pg. 89), will be the finishing touch on my family brownie recipe. The addition of family owned and operated Karen’s Naturals Just Strawberries (freeze dried strawberries), a featured product in the crate chosen by Stella, adds a beautiful light pink hue to the whipped cream and a surprising fruit flavor. Homemade strawberry whipped cream? If that doesn’t scream love, I don’t know what does!
Stella wasn’t kidding when she wrote that this recipe is low maintenance. I used my Cuisinart food processor to grind the freeze dried berries (combined with sugar), then added heavy cream. A few minutes later, I had the most beautiful and delicious whipped cream I’ve ever seen or tasted. The consistency of the cream reminded me of gelato. It actually looked frozen in the bowl of my processor, but was delightfully light and airy when I sneaked a sample. You can refrigerate any leftovers for up to one week and re-whip before serving. Although, I seriously doubt any will be leftover in my house.
