Let's talk tahini! Our newest CrateChef, Molly Yeh, chose tahini from the sesame concept store Seed + Mill based in New York City's Chelsea Market for our current crate. For those of you who have never had tahini, it is a rich sauce or paste made from roasted ground sesame seeds. Seed + Mill source the highest quality sesame from Humera in Ethiopia and roast it at precise temperatures to ensure exceptional flavor as well as maintain the extraordinary health benefits of this tiny seed. Tahini is rich in iron, calcium and protein and helps lower cholesterol and improve skin elasticity! Tahini is often compared to peanut butter, but with it's higher levels of fiber and lower levels of sugar and saturated fats it should be your go to condiment for your snacks, dips, smoothies and even baked items. Seed + Mill's recipe section of their website is full of unique and creative dishes using tahini. I recently needed a veggie side for dinner and decided to try their Lemony Tahini Yogurt Sauce with Roasted Carrots (recipe below). So easy, so good and healthy. Next time, I'll try something sweet - date bliss balls, tahini honey biscotti or tahini ice cream. The possibilities are endless :) Look for a sweet tahini recipe soon.

Pre-heat oven to 425 F. Whisk together all the ingredients for the tahini sauce in a bowl and refrigerate. Place all ingredients for the carrots into a bowl and mix until carrots are well coated. Spread over a baking sheet and roast for 40 mins. Allow carrots to cool slightly before transferring to serving plate. Drizzle with tahini sauce and a sprig of thyme or any other green herb, if desired.
