I love to cook, but sometimes life gets in the way. We all lead busy demanding lives and meal planning, shopping and cooking can sometimes rank low on my list of to-do's. Lucky for us, our current CrateChef, Whitney Miller, has included her second cookbook Whitney Miller's New Southern Table in our latest box.
New Southern Table celebrates Whitney's favorite family recipes and gives them a modern twist by incorporating the flavors and cultures she experienced during her travels after winning Masterchef. Last week, I was looking for an easy one-pot chicken dish. Whitney's Mustard and Herb Roasted Chicken Breasts with Artichokes, Mushrooms and Green Tomatoes (p. 179) hit the mark. The fresh herbs combined with the artichokes and mushrooms elevates this dish from simple baked chicken to a company worthy meal. Any time I can use my cast iron skillet on the stove top and finish off a dish in the oven, I feel like I've won :)
