Introducing Pastry Chef Stella Parks New York Times Best Selling author of BraveTart: Iconic American Desserts and current Senior Editor of Serious Eats. Chef Parks graduated from the Culinary Institute of America, in Hyde Park, New York in 2002.
After working in restaurants for a few years, Parks decided to make a change. She "cashed out her life savings to attend language school in Tokyo so she could read the secret menu at her favorite sushi joint". We wish we could be that brave. After spending six months immersing herself in the culture and comparing baking techniques, Parks returned to her hometown of Lexington, Kentucky, and has in her words, "spent every day since baking something". Lucky for us.
BraveTart is a celebration of recipes for homemade takes on some of your favorite childhood sweets. Parks not only shows the reader how to make these treats entirely by hand, she gives us a scholarly lesson in the science and history behind these iconic sweets. Handmade sprinkles? One bowl Devil's Food Cake? Oreo's? Yes, yes and yes. From the over 100 recipes (and 200+ variations), vintage advertisements and gorgeous photography, BraveTart will take you on an epic baking adventure.
Food & Wine named Stella one of Americas Best New Pastry Chefs in February 2012 and she was nominated for a James Beard Award for roasting sugar.
