Known for his original spin on traditional fare, Chef Kenny Gilbert is spicing things up. The former “Top Chef” fan favorite has honed his craft, curated his recipes and developed the foundation for his spice blends while traveling the world as a chef at top restaurants in Japan, Spain, France and the Caribbean.
He’s come home with his latest venture, Silkie’s Chicken and Champagne bar. The restaurant -- located in his own historical neighborhood in Jacksonville, Florida – is devoted to all things chicken and champagne. “Chicken is a comfort food that is pandemic proof,” said Chef Kenny, who introduced his restaurant concept first with take-out that he served from his home.
